Chicken Enchiladas
Ingredients:
1 bag shredded Mexican cheese blend
10 corn tortillas
2 cups diced/shredded chicken
1 small can green chiles
1 jar Green Chile sauce (see green chile recipe)
If you are too lazy then just use 1 jar brand 505 green chile sauce
1 onion, diced
Cilantro (optional)
Directions:
Preheat oven to 350º F
Mix onion (diced), chiles, and chicken in a bowl with enough sauce to coat [add cilantro if desired]
Nuke tortillas for about 30 seconds (best in a tortilla warmer)
Fill and wrap tortillas
Place in a baking dish
Top with green chile sauce to cover all tortillas
Top with shredded cheese [add cilantro if desired]
Bake for about 30-35 minutes
Or until heated through and cheese is melted
