Chocolate Chip Cookies
Ingredients:
1 cup butter, softened
1 cup brown sugar
1 cup granulated sugar
1/2 tsp salt
1 tsp baking soda
2 tsp vanilla extract
2 eggs
3 cups flour
2 cups chocolate chips (not milk chocolate)
Directions:
1 - Cream the butter, sugars, salt, and baking soda
In the bowl of a stand mixer with paddle attachment, combine butter, brown sugar, granulated sugar, salt, and baking soda
Mix on medium for two minutes
Increase the speed to medium-high for two more minutes - pause to scrape down the sides
The dough should be a pale tan color with a fluff, whipped texture
2 - Add vanilla and eggs
While the mixer is going, add the vanilla extract
Add in eggs slowly one at a time
Increase the mixing speed to high, then continue mixing for another minute or so, until eggs are fully incorporated
3 - Add flour and chocolate
Add flour and chocolate chips to the mixer and mix until all of the flour is incorporated
4 - Chill
Preheat oven to 350º F
Grease a baking try or line it with parchment paper
Portion cookies on to baking tray, place in fridge and chill for at least 15 minutes [optional]
5 - Bake
Bake cookies for 13-14 minutes
Transfer to cooling rack and let sit for 10 minutes
